Surprise!!! Saturday, Oct 27 2007 

This afternoon my neighbors gave me a surprise baby shower. I was completely shocked! Even after I walked in and saw everyone sitting there, it still took me a few seconds to realize what was going on. I was still thinking about what yummy treat my neighbor had for me, because the girls told me that they had made me a treat and they wanted me to go down there and get it. I kept insisting that they bring it up. I’m very tired these days, you know? 🙂  Finally, the girls said they were leaving with or without me, so I gave in. I was 30 minutes late. Oops!

Late night school Wednesday, Oct 24 2007 

This is what the little kids were doing a few nights ago, just before bed. I let them stay up that night, because I couldn’t interrupt such a wonderful moment. The older gilrs were in the other room crocheting scarves to send to the children in Iraq. Unfortunately, I can’t find the pictures in my computer.

A 4 Real friend Wednesday, Oct 24 2007 

Yesterday the kids and I went to visit a friend from the Real learning forum. The kids had a wonderful time playing with each other. Marilyn prepared a wonderful brunch for us. She made the most delicious apple cider and apple pie, which we ate with the creamiest vanilla ice cream. Marilyn and I sat and talked for a while and enjoyed going through the cutest baby clothes she had for me. Time goes by so fast when we get together. Here are a few pictures we took before we left.

For dinner we will be having Paella. This is how it turned out.

Paella

Here is the recipe:

Ingredients

  • 10 (4 ounce) links mild or hot Italian sausage, cut into 1 inch pieces
  • 15 raw chicken tenders or strips
  • 2 pounds large shrimp – peeled and deveined
  • 1 onion, chopped
  • 1 green bell pepper, seeded and cut into strips
  • 1 large stalk celery, with leaves, finely chopped
  • 2 cloves garlic, minced (optional)
  • 2 cups uncooked long grain rice
  • 2 (14.5 ounce) cans peeled and diced tomatoes, juice reserved
  • 2 bay leaves
  • 2 teaspoons salt
  • 1 teaspoon dried oregano
  • 3/4 teaspoon ground turmeric
  • 3 1/2 cups chicken broth

Directions

  • Heat a wok over medium-high heat. Fry hot and mild Italian sausage pieces in the wok until brown on all sides. Remove sausage, and fry the chicken strips in the sausage drippings until browned. Remove chicken and saute onions, green pepper, celery, and garlic for 5 minutes, or until tender.
  • Stir in the uncooked rice, tomatoes, bay leaves, salt, oregano and turmeric. Cook and stir for 1 minute, then mix in the reserved tomato juice and chicken broth. Add chicken pieces, cover and simmer for about 20 minutes.
  • Add sausage to the mixture, and continue to simmer for 15 minutes, then stir in the shrimp; cover and cook for 5 to 10 more minutes, or until shrimp is cooked through.

Another gift from St. Therese Tuesday, Oct 9 2007 

This afternoon I received a gift from a dear friend, Anne. Thank you, Anne, for such a perfect gift for our family. We will certainly remember you in our prayers.

Today just happens to be Tuesday, when St. Therese gives a shower of roses to those who pray three Hail Marys in her honor every Tuesday.

This gift is a Sacramental Oil from the House of Loreto. The Holy House of Loreto, the first shrine of international renown dedicated to the Blessed Virgin, has been a true Marian center of Christianity for several centuries. This is the stone house in which Jesus, Mary and Joseph lived in Nazareth.

According to tradition, in 1291, when the Crusaders were finally expelled from Palestine, Our Lady’s stone house was transported "by angels" first to Illyria (in Croatia), then to the territory of Loreto on December 10, 1294, where it remains to this day.

Oil is blessed at the Shrine and burns in the lamps before the altar in the Holy House. At certain times, this blessed oil is drained from the lamps and poured into small containers for distribution to pilgrims.
