Meatless Recipes for Lent: Week 4 Friday, Mar 30 2007 

Jennifer, from S/V Mari Hal-O-Jen has an awesome recipe on Portabello Burgers. It is one of their favorite ways to cook Portabellos. Absolutely delicious! The picture says it all.

These are two of my favorite meatless recipes. I hope everyone enjoys these.

Fettuccini Alfredo with Shrimp

Ingredients:

  • 1/2 cup sweet butter, melted
  • 1 cup heavy cream, warmed
  • 3/4 cup freshly grated Parmesan cheese
  • Salt to taste
  • 1/4 teaspoon freshly ground pepper
  • 8 ounces Fettuccini or Angel Hair, cooked
  • 3/4 pound cooked shrimp

Directions:

Mix first 5 ingredients. Pour over warm pasta. Add shrimp and toss to coat. Serve immediately.

Spinach and Dill Rice

Ingredients:

  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon vegetable oil
  • 2 tablespoons fresh dill, chopped
  • 1 can tomato sauce (15 ounce)
  • 1 package frozen spinach, thawed (10 ounce)
  • 1/2 cup water
  • Salt and pepper to taste

Directions:

In a saucepan, heat the oil and sauté the onions. Add the garlic and dill, sautéing for 2 minutes. Add the tomato sauce, bringing to a boil. Reduce heat and simmer for 10 minutes. Add the spinach and water, bringing to a boil for 1 minute, stirring. Cover and simmer on low for 15 minutes. Serve over steamed rice.

O Blessed Trinity, We thank you for having graced the Church with Pope John Paul II and for allowing the tenderness of your Fatherly care, the glory of the cross of Christ, and the splendor of the Holy Spirit, to shine through him.

Trusting fully in Your infinite mercy and in the maternal intercession of Mary, he has given us a living image of Jesus the Good Shepherd, and has shown us that holiness is the necessary measure of ordinary Christian life and is the way of achieving eternal communion with you.

Grant us, by his intercession, and according to Your will, the graces we implore, hoping that he will soon be numbered among your saints.

The “humility” of a 4 year old Monday, Mar 26 2007

On our way home from Mass yesterday, I was talking to the kids about consecrating ourselves the our Blessed Mother. I told them that when we give everything to her, she makes things beautiful and perfect, and in turn, she gives them to Jesus.

Our very humble 4 year old immediately said, "I’m beautiful and perfect!!!" Aren’t children awsome?
