… make peanut butter cookies. I bought 2 huge jars of organic peanut buttter at Costco, but the kids did not like it at all. Today while cleaning out the pantry, I found the two jars barely used, so I decided to put them to good use. The cookies came out great and the kids don’t know I used the "nasty" peanut butter. Maybe I’ll tell them when the cookies are all gone 🙂


Peanut Butter cookies


1 cup unsalted butter
1 cup creamy peanut butter 
2 cups packed brown sugar
3 eggs
3 cups all-purpose flour 
1/2 teaspoon salt
2 teaspoons baking soda


Cream together butter, peanut butter and sugar. Beat in eggs.
In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter.
Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.
